Early in his career, he portrayed Short Round in Indiana Jones and the Temple of Doom (1984) and Data in The Goonies (1985), which was followed by Head of the Class, It Takes a Thief, Passenger, Breathing Fire, Second Time Around, Together We Stand, Tales from the Crypt, and other films. He then worked as a stunt coordinator and assistant director.

Quan served as a stunt choreographer in the production of the blockbuster film X-Men. He returned to acting in the film Everything Everywhere All at Once (2022) as Waymond Wang, a character for which he gained critical praise.
