At Azusa Pacific University, an NAIA school in Azusa, California, he played collegiate football. Canales had 27 receptions for 293 yards and one touchdown during his time in college.

Starting in 2004 and 2005, Canales led the freshman/sophomore squad at Carson High School, where he also served as offensive coordinator. This was the start of his coaching career.

In 2006, Canales entered El Camino (Calif.) College and broke into the collegiate coaching scene. Before moving to quarterbacks coach in his final season with the team (2007–08), he spent his first year coaching tight ends and serving as coordinator of special teams.

He oversaw the school’s two Mission Conference championships and its 2006 California Community College State Championship win.

Canales got to know USC Trojans head coach Pete Carroll while he was attending El Camino College. Canales joined Carroll at USC in 2009, spending a season there as an assistant strength coach.

After Carroll accepted the head coaching job with the Seattle Seahawks in 2010, Canales took over. In Super Bowl XLVIII, the Seahawks overcame the Denver Broncos to win their first Super Bowl championship.

Canales played a number of positions on the offensive side of the team for the Seahawks for thirteen years. Canales was the wide receivers coach from 2010 to 2017, and then from 2018 to 2022, he was the quarterbacks coach and passing game coordinator.

Canales received recognition for playing a part in quarterback Geno Smith’s comeback. As the team’s starting quarterback in 2022, Smith was very successful and won NFL Comeback Player of the Year. He also made his first Pro Bowl participation.

Canales replaced Byron Leftwich when he was signed by the Tampa Bay Buccaneers on February 16, 2023, to serve as their offensive coordinator under head coach Todd Bowles. Canales was appointed head coach of the Carolina Panthers on January 25, 2024.
