Rees-Zammit began his junior career with the Cardiff Blues, then transferred to Hartpury College and the Gloucester Rugby Academy.
At the age of eighteen years and seventy days, he made his Premiership debut for Gloucester in the 2019–20 season, making him the club’s youngest player ever.
In 2019, Rees-Zammit would also become the youngest European player for Gloucester and the youngest European try scorer. In December 2019, the team defeated Worcester 36–3 with two tries scored by him. Later that month, in a 33–26 loss to Northampton, he became the first 18-year-old to score a hat-trick of tries.
In December 2019, he was named Premiership Player of the Month. At the end of the season, Rees-Zammit scored 15 tries in 21 games, including 10 in 10 Premiership starts.
With the signing of his first professional contract on January 13, 2020, Rees-Zammit committed himself to Gloucester for the long haul.

Rees-Zammit was included in the British & Irish Lions 2021 South Africa team on May 6, 2021. At 20 years and 93 days, Rees-Zammit’s selection made him the youngest Lion chosen since the 1959 Lions tour to Australia and New Zealand.
In the first provincial match of the trip against the Lions, Rees-Zammit made his debut for the Lions and scored the first try three minutes in.
In the next game, Rees-Zammit was chosen to play against the Sharks and again registered points as the Lions defeated them 54-0.
Rees-Zammit scored in the tour’s last provincial match against the Stormers on July 17, 2021, as a replacement, bringing his total to three tries in four games.
